Eggless Chocolate Nuts Cake

Yesterday, I was in a mood to bake and decided to make soft, moist and easy eggless chocolate nuts cake using curd. Absolutely delicious and needs no adornment. One beats into a sice of this cake is a heavenly experience.



Ingredients :

All purpose flour - 1 cup
White sugar - 1 cup
Brown Sugar - 2 tbsp
Cocoa powder 1/4 cup
Vegetable oil - 1/4cup
Yogurt/curd - 1/2 cup
Warm milk - 1/2 cup
Vanilla essence - 1/2 tsp
Baking powder - 1/2 tsp
Baking soda - 1/4 tsp
A pinch of salt
Chopped Cashew & Almond - 1/2 cup





Method :

Preheat the oven to 180C for 15 mins.

Sieve the dry ingredients maida, cocoa powder, baking powder and soda , mix together.

In a deep bowl, mix oil, curd, sugar and vanilla essence. Beat well with beater, Do not overbeat.

Then add flour mixture and fold very gently with wooden ladle.

Ensure that the mixture has a loose consistency. Now add chopped cashew and almond and mix them gently.

Grease a round vessel. Pour the batter into the cake mould and pour some chopped almond pieces on top.

Now bake at 180C for about 30-40 mins or till done. Insert a clean knife in the cake, if it comes out clean the cake is done.

Allow it to cool completely before unmolding it.
