Spicy Chicken Noodles

Chow mein means stir-fried noodles in Chinese where “mein” means noodles. There are two main types of chow mein.  First one is the steamed chow mein and the other one is the crispy chow mien. This is one of the most popular Chinese dishes, so popular it can be found almost all corners. Chow mein is a Chinese-American dish of bits of meat and vegetables served over crisp, fried noodles.


Ingredients :

Noodles : 2 blanche
Boneless skinless chicken breasts, cut into thin strips : 10-12 pieces
Onion : 1, small
Cloves garlic, minced
Peanuts : 1 tbsp.
Vegetables : 1 cup (carrot, beans, capsicum)
Dark Soya Sauce : 1 tbsp.
Tomato Sauce : 11/2 tbsp.
Chilli Sauce : 1 tbsp.
Vinegar : 1 tsp.
Salt to taste


Method :

Blanch the noodles in boiling water for 3 - 5 minutes, or cook according to the package directions.

Rinse all the vegetables and drain thoroughly. Cut the capsicum in half, remove the seeds, and cut into thin strips.
Cut the vegetables into thin one inch sized pieces. Put in all the vegetables in a deep pan and half boil them.

Heat oil in a wok. When the oil is hot, fry peanuts until golden colour and keep aside.

In the same oil add the minced garlic and stir-fry briefly until aromatic. Now add onion and capsicum, saute for 2-3 mins, then add chicken pieces, little salt, fry for 5-7 mins.

Now add half boiled vegetable and boiled noodles, Mix well.
Then add fried peanuts, dark soya sauce, tomato sauce, chilli sauce, salt, vinegar, mix and Stir fry for 5-7 mins.

Chicken Noodles is ready to serve.......
